Baobab Energy Balls
Healthy energy balls seem to be all the rage these days. So what’s different about these ones?
Firstly, they feature Baobab; an African fruit packed with nutritional goodness and if you haven’t yet heard of it you soon will as it’s being touted as the new Superfood for 2016. It contains very high levels of Vitamin C, absolutely critical for energy production and immunity. They are also packed with magnesium, a key mineral involved in over 300 reactions in the body as well as being central to managing stress levels and mood.
As if that wasn’t enough, they also have prebiotic qualities which in a nutshell means they help to feed the good (probiotic) bacteria in our gut, again essential for energy production.
Secondly, they contain high levels of protein due to the addition of lots of different types of nuts and seeds. They are also super easy to make and work out much cheaper than buying shop bought energy bars, which can often be laden with processed sugar and other unhelpful ingredients… so get blitzing!
• 1 cup of medjool dates
• 1/2 cup of cashews
• 1/2 cup pecans
• 2 tbsp. of chia seeds
• 2 tbsp. of linseeds
• 2 tbsp. of desiccated coconut
• 2 tbsp. of baobab
• 1 tbsp. of coconut oil
• 1 tbsp. of cashew nut butter
1. Place all the ingredients in to a food processor and blitz for a minute or two until everything is blended well together and has become sticky.
2. Roll the mix into small balls. Place in the freezer for an hour or so to set and then they can be stored in the fridge.
